Nutrient Evaluation of Dining Center Food Waste and Comparison to Monogastric and Ruminant Feedstuffs

The objective of this study was to analyze the nutrient composition and variability university dining hall food waste compare it with common feedstuffs used in ruminant monogastric diets. Food categorized into two initial streams: mainstream (MS) from serving line vegetable preparation (VP) kitchen. Waste collected Kramer Dining Center, Kansas State University, resulting 30 daily samples. weighed ground homogenous particle size. Daily samples MS VP were analyzed for composition, where results combined calculate profile a hypothetical mixed stream (MX) composited by total weight. Data using R statistical software (v 4.2.2).
